Lemon Meringue Pie Recipe

This is a simple recipe for tart and tangy lemon meringue pie!
Ingredients
- 9 inch pie pan
- Your favorite pie crust
- 1 cup white sugar
- 2 tablespoons all-purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 2 lemons (or 6 tbs of lemon juice)
- Zest from 1 lemon
- 2 tablespoons butter
- 4 egg yolks, beaten
- 4 egg whites
- 6 tablespoons white sugar
Instructions
- Preheat oven to 350 degrees F.
- If your pie crust isn’t already baked follow these directions and add 45 minutes to the time of the recipe. Place your homemade or store-bought pie crust into a 9 inch pie pan; line crust with parchment paper and fill with pie weights {or dry beans}. Bake crust until lightly browned, around 40 minutes. Carefully lift and remove paper with pie weights and allow crust to cool.
- In a medium saucepan, whisk together sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter.
- Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat.
- Pour filling into baked pastry shell.
- In a large bowl whip egg whites until foamy. Gradually add sugar and continue to whip until stiff peaks form. Gently spread meringue over pie making sure to seal the edges at the crust.
- Bake in preheated oven for 10 minutes, or until meringue is golden brown.
Remember not to store your leftover pie, that is if you have any left over, in plastic wrap. Wrap it loosely with foil so that it has room to breathe.

MMM! Ashely, your pie looks wonderful! I love lemon meringue. When I was going through some mementos recently, I found a card that my grandma wrote me when I was about 14 or 15, thanking me for a lemon meringue pie I had baked and brought over. She passed away in 1999 so it was a really special thing to find. Now when I see lemon meringue pie, I think of Grandma!

It just makes the pie sweat and it changes the texture of the meringue. Don’t get me wrong, I would still eat it but it wouldn’t be quite as good as if it had a little room to breathe. 🙂
