Caramel Pumpkin Trifle

This Caramel Pumpkin Trifle brings delicious fall flavors together in an easy and elegant dessert!  It’s like eating fall in a cup.  This is a great dessert to make in individual servings or in a big trifle dish for the holidays.  Thanksgiving is right around the corner you know!

The weather around here has been crazy.  It’s 76 on the day we get our Christmas pictures and are suffering in our sweaters and the next day it’s in the 50s and the bitter cold wind cuts through us no matter what we put on.  Pumpkin is the perfect dessert for either temperature!  Pumpkin pie can be eaten cold or served warm.  I chose to heat up mine for this dessert and afterwards I realized that I probably should have done it cold for better pictures but it was so good warm! 🙂

This yummy parfait is made with Marie Callender’s pumpkin pie, caramel sauce, graham crackers, and Ready Wip.  My favorite thing about this recipe is how easy it is.  My kids helped me make it and they loved making it as much as eating it.


Caramel Pumpkin Trifle


Directions:  Gather your ingredients and add a heaping tablespoon of crushed graham crackers to the dish.  Add a layer of pumpkin pie.  Add a layer of Ready Wip.  Add a layer of crushed graham crackers.  Add a layer of pumpkin pie.  Add a layer of Ready Wip.  Drizzle caramel layer on top of your dessert for a lovely presentation.

Mini Pumpkin Pie

We had some leftover pumpkin pie and made these little pumpkin hearts with cookie cutters.  We added a little Ready Wip on top and sprinkled with cinnamon and they were ready to serve!  These mini pumpkin pies are yummy with hot chocolate.   We add a squirt of Ready Wip and a sprinkle of cinnamon to our Swiss Miss hot chocolate to make it extra special!

I’m not one for making pies, Marie Callender makes all of mine for me.  I figure that make in another stage of life I’ll learn how and make the perfect pies.  For me, stopping by Walmart is a fool-proof way to get a delicious pie and I can spend more of my time with those who mean the most to me.  Easy peasy.

As it is with most people, Christmas is always a special time in our household.  We have a lot of traditions that are sticking.  Driving to see the Christmas lights, opening one present on Christmas Eve, making homemade Christmas ornaments, baking Christmas cookies to share with loved ones, and a special breakfast on Christmas morning.

Blueberry Cake Waffles

This week my daughter and I (and my son at some points) baked and baked.  We baked (a frozen) pumpkin pie, white chocolate macadamia nut cookies (my favorite!), gingerbread men (my husband’s favorite!), and these delicious blueberry cake waffles.  These waffles may just be what we need this coming Christmas morning!!  They are delicious and so very easy to make.

The picture above is for our gingerbread recipe and not the waffle recipe.  I’m only stating this because I don’t want anyone to add molasses to their waffles.  Although, it might not be too bad! 🙂

By the way, I have to brag on Walmart Grocery!  I am in love with their drive up, pick up service.  Ordering the night before and scheduling a time to pick up is THE. BEST. THING!  It’s so nice.  I was able to stock up on all of my baking goods before our day of baking began and I didn’t even have to step foot in the store.  Even if you don’t have Walmart Grocery pick up in your area yet the Walmart baking isle is still the go-to place for all your baking needs!  It has enough Gold Medal all-purpose flour and Arm & Hammer baking soda to keep your pantry stocked till new years.  These are brands that families have trusted for over 100 years!

Blueberry Waffles

We’ve always been big waffle people since we were given a waffle iron as a wedding gift.  We used to have them regularly every week and while we’re not as consistent in making waffles these days it is still a special treat to be savored!  One trick I learned a few years back about making waffles is to let the batter rest before making.  Letting the batter rest 5 minutes between mixing and spooning it onto the griddle will make the waffles much fluffier.  Plus, what mom doesn’t need that 5 extra minutes to get juice poured, heat up the syrup, make sure you have enough clean forks (wait, is that just our family? lol), and a million other little odds and ends that moms (and dads!) do in the morning.

Blueberry Cake Waffles Recipe

Here’s what you need to make these little beauties!


  • -2 Cups Gold Medal all-purpose flour
  • -1 Cup butter milk
  • -2 Large eggs
  • -½ Cup melted butter
  • -¼ Cup sugar
  • 1½ Tsp Baking powder
  • -½ Tsp Arm & Hammer baking soda
  • -1 Tsp vanilla extract
  • -1 Cup blueberries


  •  -Preheat the waffle maker.
  •  -Sift in a large bowl the all-purpose flour, sugar, baking powder, and baking soda.
  •  -Add the eggs, melted butter, blueberries, sugar, and vanilla.  Mix the batter for 1 minute.
  •  -Let the batter rest for 5 minutes.
  •  -Add a layer of melted butter to the waffle maker and pour the batter into it.
  •  -Cook according to the instructions of the waffle maker.
  •  -Serve with the remaining blueberries and enjoy.
  •  -Top with melted buttercream icing if you like. 🙂 That’s how I like it!

How to Cook Perfect Bacon

Everyone has their go to comfort foods. Mine used to be chocolate chip cookies. I could make them in 20 minutes from start to yummy finish. Ever since I had my son I have some weird issue where I don’t like cookies anymore. It’s sad but I’ve moved on to ice cream and bacon. Not together though!   • – Preheat oven to 400 degrees.
  • – Line a baking sheet with foil.
  • – Arrange bacon on foil and bake for 15-20 minutes

  • – Remove from oven and immediately place the bacon on a plate of paper towels to cool.
  • – Enjoy!

Coffee Cake Recipe

Makes 16 servings


  • – 3 cups Malt-O-Meal Cinnamon Toasters Cereal, slightly crushed
  • – 1/2 cup firmly packed brown sugar
  • – 1/2 cup pecans
  • – 1 ½ teaspoon cinnamon
  • – 1 package yellow cake mix
  • – 1/3 cup sour cream
  • – 3 eggs
  • – 2 tablespoons butter or margarine, softened


  1. Heat oven to 350°F.
  2. In a large bowl, combine cereal, brown sugar, pecans and cinnamon; set aside.
  3. In a large bowl, prepare cake mix using water required on package; add sour cream and eggs.
  4. Pour ¼ batter into two greased 8-inch square pans.
  5. Cover batter in each pan with ¾ cup cereal mixture.
  6. Divide remaining batter between cake pans.
  7. Stir butter into remaining cereal mixture and spread over cake batter.
  8. Bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool. Enjoy!

Mint Cake Squares

Every once in a while I find myself craving something with chocolate and mint. You know the super refreshing flavor combo that a lot of popular ice creams and cookies have. And every time I find myself with those cravings I whip up a batch of Mint Cake Squares.

Mint Cake Squares are one of the easiest desserts ever. You don’t need decorating skills, you don’t need to spend a lot of time mixing and prepping, and the ingredients are mostly things that you probably already have.

Chocolate Mint Cake

They are also a total crowd favorite, seriously friend! You’ll want to make a double batch of this just to make sure you have enough Mint Cake Squares for everyone and then enough leftovers. I seriously haven’t found the first person that doesn’t like them and every single person that tries them asks for the recipe. So you can be sure that this is a tried and true hit.

For me the secret is adding the mint only in the frosting, so you get the super chocolaty, super fudgy cake base, and then you get the cool and refreshing mint frosting. A couple of times I have added the mint extract in the cake as well but the result is not nearly as good so even if you are a mint aficionado, don’t go that route.

And then after yo have your cake done and frosted, top it off with some crunchy chocolate shavings, not only they are super cute and really help to decorate the cake (and cover any decorating mistakes) but they also provide another layer of flavor, which is pretty awesome as well.

You can serve it by itself, with a big scoop of vanilla ice cream (the bigger, the better) or even with some whipped cream and a couple of berries.

Mint Cake Squares


  • – 1 Cup all-purpose flour
  • – 4 Tbsp butter, melted
  • – ½ Cup cocoa powder
  • – 1/2 Cups dark chocolate, melted
  • – ½ Cup sugar
  • – 2 Eggs
  • – 1 Tbsps baking powder
  • – 2 Tsps vanilla extract
  • – 3 Tsps mint extract
  • – 1 Cup pecans, chopped
  • – 2 ½ Cups vanilla frosting
  • – 1 Drop green food coloring
  • – 1/4 Cup chocolate shavings


  • – Preheat oven to 350°F. Grease and flour a cake pan. Set aside.
  • – In a bowl, pour the melted chocolate, add the sugar, butter, and eggs and beat until incorporated (around 3 minutes).
  • – Continue whisking while adding flour, vanilla extract, pecans, cocoa powder, and baking powder.
  • – Pour the batter into the prepared cake pan and take to the oven. bake for 35 minutes or until done.
  • – Remove from the oven, and let it cool until it’s no longer hot to the touch.
  • – In a bowl, place the frosting and mix with the mint extract and the green food coloring.
  • – Frost the cake and top with chocolate shavings.
  • – Cut into squares, serve and enjoy.

Slow Cooker Spinach Cauliflower Dip

Spinach and Artichoke Dip is one of those things that everyone loves! However, my heart goes with this Slow Cooker Spinach Cauliflower Dip, why? Well my friends, mainly because it gets done in your Crockpot while you are getting ready for your party, or gathering, or book club, or any other moment that requires a good dip.

So basically this is not only delicious but is as hands off as a homemade dip can possibly get, it’s also a delicious twist from the traditional recipe while keeping all the things that we already know and love.

For me, the reason why this is so delicious is because it’s creamy and velvety and just really jam packed with a ton of flavor, and there’s the fact that it has crispy bacon on top that just makes anything better.

Another great thin about this recipe? It’s a melty combo of cream cheese and mozzarella cheese and sour cream (seriously add the sour cream, it’s a game changer!) everything held together by bright spinach and uber flavorful and soft cauliflower. Man, just thinking about it is making me crave it again.

Now this is when the magic happens. Just throw everything into your slow cooker and let it work out for you. Seriously, it’s just a matter of measuring everything (or eyeballing it), throwing it in there and letting it sit for 2 hours. The only thing that you really need to cook, and that’s if you like it crispy (but who doesn’t?), is the bacon, but you could also throw it in there to get all the bacon flavor (sans the crispiness) and without cooking anything else.

Spinach Cauliflower Dip Recipe

Finally, serve it with crackers and bread or go healthy and serve it with a platter of crudites, or you know just eat it with a spoon, it can be our little secret.


  • – 6 Bacon strips
  • – 1 Cup mozzarella cheese, shredded
  • – 1 Cup sour cream
  • – ½ Cream cheese brick
  • – 1 Cup cauliflower florets
  • – 1 Cup spinach leaves
  • – ¼ Cup green onions
  • – 1 Tsp oregano
  • – Salt and pepper to taste


  • – Chop the cauliflower florets into small pieces and transfer to a slow cooker.
  • – Add the cream cheese, sour cream, mozzarella cheese, spinach, half the green onions, oregano, salt and pepper.
  • – Cook for 2 hours over high.
  • – Cut the bacon strips into small pieces and cook them until crispy in a saucepan over medium heat.
  • – Pour the mix into a serving bowl and top with the bacon and remaining green onions.
  • – Serve with crackers and enjoy.

There have been many instances in my life when I felt that I was doing more than stepping out of my comfort zone, I was jumping out.  Maybe not jumping with excitement but jumping nonetheless.   Standing timidly as if on the top of a wooden platform that I just climbed 30 feet to get to.  The deep water was below me.  I couldn’t climb down, I had come too far.  It wasn’t a jump in the air.  It wasn’t with a squeal of excitement I jumped.  I just kind of stepped off.  Stepped off into deep and cold water.  After a while the water became comfortable and warm.

I find myself doing that time and time again in life.  It’s as if I nonchalantly meander further than I would ever feel comfortable only to realize what I’ve done, dread it, hold my breath and conquer my fears.  The jumping off the tower was more than an illustration, it is something that really happened to me at a leadership conference (of all places!) when I was in high school.  The teens I was with (more importantly the teen boys) were too scared to do it so I said I would.  What was I thinking?!  This happened again when I went to a college I had never properly visited and didn’t know a soul there.  And again when my class chose me to speak at our graduation and I agreed (I’m not a naturally gifted speaker!).  When I went to Ireland by myself to stay for three months with a family there.  When I accepted a job at a radio station (Not a quick witted speaker, remember?).  Time and time and time again I’ve put myself out there and I can’t remember a single time regretting it.  Even owning a blog where I share of myself feels bold.  It is bold because I have thin skin and the sometimes cruel emails I receive cut deep.

Living boldly is something I want to pass on to my kids.  It’s not about never being scared but about pushing through the fear.  It’s not a boastful, “look at me” type of boldness but a silent “I can be who I am without fear” type of boldness that I wish for my children.

School Pictures 2016!

My daughter had her first day with our new homeschool community this week.  She didn’t know anyone and she wasn’t scared a bit…or maybe she was but pushed through it like her mommy.  She beamed with excitement the whole day long but I’m sure I was beaming brighter.  My little girl was being bold, so beautifully bold.

Savoring Mornings With Crunchy Pecan Cereal

The last few weeks have been very busy around our house.  School pictures, my daughter sang in a 9/11 tribute performance for local servicemen, a new cycle of Kids4Truth is starting, my daughter has had two trips to the doctor’s office for what looks like chicken pox or poison ivy (but the doctors don’t know what it is), my internet has been spotty, and we’ve started trying to take my youngest to the potty.  Wait, that wasn’t the last few weeks, that was last week alone!  Needless to say, things have been a little crazy here.  When things get crazy I do my best to simplify life.

I’ve been taking time to intentionally talk and connect with my family.  My husband took my daughter out to the mall (he bought her the cutest little purse at Gymboree), out for ice cream, and then bowling.  Impromptu daddy/daughter date after a doctor visit.  This gave me a lot of time to connect with my son who I found out is quite chatty when his older sister isn’t around.  I love one on one time with my kids.

Muffins are delicious and I seriously consider them one of my favorite breakfast options. From time to time, I find myself making them for dessert and grabbing one or two as a snack. These cinnamon sugar pumpkin muffins are my favorite muffins, and that comes from a gal that has made a ton of different muffins over the years.

This is one of those incredibly good and mouthwatering recipes. It’s also really easy to make and it’s perfect for this season! I like to make them with store bought pumpkin puree but I once made them with pumpkin puree made from scratch and the result was just as good!

What I love the most about this recipe is how incredibly easy it is to whip up. There aren’t a lot of complicated steps or difficult ingredients. Just the tried and true ones you probably already have in your pantry.

The only thing that’s a bit out of the ordinary is the oat flour but you can make it yourself grinding oats in your food processor until fine. It takes around 40 seconds top and it makes the Cinnamon Sugar Pumpkin Muffins even more filling which makes them an incredibly good option for breakfast.

And then there’s the topping. Oh my, the topping that coats the muffins tastes delicious. It’s sweet, it’s a bit crunchy, and it’s a total crowd pleaser. I just mix some milk, powdered sugar, and a pinch of vanilla extract and then is just a matter of filling a piping bag and decorating.

I sometimes skip the topping to keep the muffins healthier or if I’m a real hurry because they are delicious by themselves, but the topping really makes this a total crowd favorite recipe.  It’s one of those recipes that people ask me for after they try them.



  • – 1 ½ Cup all-purpose flour
  • – ½ Cup oatmeal flour
  • – 1 Cup pumpkin puree
  • – 1 Cup milk
  • – ½ Cup butter
  • – ½ Cup sugar
  • – 1 Egg
  • – 2 Tsps vanilla extract
  • – 1 Tbsp ground cinnamon
  • – 1 Tsp baking powder



  • – Preheat oven to 375°F.
  • – In a bowl, mix the mashed pumpkin with the sugar, milk, vanilla, butter, egg, and ground cinnamon.
  • – Add the all-purpose flour, oatmeal flour, and baking powder into the bowl. Stir repeatedly until the batter has no lumps left.
  • – Set a cupcake tray with paper cupcake liners and fill them.
  • – Bake for 20 minutes or until done.
  • – For the glaze, mix milk, sugar, and vanilla extract until getting a thick mixture.
  • – Remove the tray from the oven and let them cool down.
  • – Drizzle the muffins with the glaze.
  • – Serve and enjoy.
